OK, I know this is my own fault, but I never upgraded past 7.0.8/used the Pangu JB. I see that Apple is no longer signing below 8...does this mean I can't upgrade at all or I'll lose my JB until an iOS 8 one comes out?

Yes, you will be able to upgrade to iOS 8.1 which is the latest version currently, you can't upgrade to any other version. And you will lose you jailbreak if you upgrade to iOS 8.1.
