Iphone 5s Which IOS version to go with next?

Hi everyone,
I've just joined, on the search to find out which IOS version to update my 5s to. I currently have IOS 7.1.1 on both my good ladies phone and on mine. I was wondering which IOS to update to that will cause least issues. Does anyone have any knowledge that will help me when selecting? Or should I just go to the latest? I will be jailbreaking as soon as I've updated.

You can only install the latest version. Don't forget to take a backup using iTunes or iCloud before upgrading.
