convert 3G/4.2.1 to touch

I want more freedom and less useless software on my 3G and I want to use it, basically, as a iPod touch. I understand the liability of what I'm trying to do, I just don't know the best course to get it done. The device is healthy, up to date and backed up through iTunes.

The best option would be to do a clean restore (backup your data before you do that) and reinstalling only those apps that you really need.

I had read that I may be able to add video function to the camera, better battery life, and improve functionality in general. I want something that looks nicer, or at least different, and I want the ability to manipulate options and software. I have plenty of experience doing this with PC's and Android, I've just never been into Apple. Which is why I'm here. I know it can be done and I know that I can find the right way, eventually. Hopefully someone here can save me some time and headaches. -
