Support the developers who bring you the games you love. Your not screwing Apple. Your merely causing would be developers to reconsider their efforts. Why develop if someone is going to steal it.
As for your question... does it still work. Most likely, it doesn't contact Apple servers. It simply executes code on your device, and the in-app content has to all ready be on your device. Think of things like Big Fish games, or Atari, where the full content is all ready downloaded, but you just need to pay 0.99 to unlock it.
As to the iOS6 question ... .your new here right? no Cydia app is guaranteed to work at the release of any new iOS. quite often it takes the developers who make jailbreak apps a little time to tweak out broken functionality when a new iOS is released. So wait first to even see if they can jailbreak iOS6 before you worry about stealing app content.
