I recently tried jailbreaking my iPod 4G running iOS 5.1.1 with redsn0w. At first it started to work until it got stuck at the running pineapple icon and the Moving Applications text underneath, so I restarted and tried jailbreaking again. This time it got stuck at the Apple logo, until 10 minutes later, the screen flashed white and rebooted in a loop. Please help!!!!

It looks like you will need to restore your iPod touch by putting it in recovery mode. Check out this article if you need help:

Ok, but my iPod was at iOS 5.1.1, and to upgrade to iOS 6.1.6 will take about an hour or more.... I will try, thank you!

It depends on the data that needs to restore to your device and your internet connection.

No, I am restoring from scratch, my data will sadly be lost but it does not matter....

Restore your iPod and JB it again , that's the only solution ...
