How to convert IPHONE 5 custom firmware into ITOUCH!

Hi,
I wish to convert my wi-fi broken, hijacked, rootkit-infected, iPhone 5 into a clean working iTouch for music and other apps. (I know, just get a new phone or iTouch...however, I want to know if this is possible.) Can you create a custom ISPW and make such a change? Is it easier to use an iPhone 5 ISPW without saving baseband, and somehow flash the existing firmware clean?
Any ideas? Otherwise, I have a memento mori of a shitty time in my life.
